Heat off @ 0min addition, hold @ 80C for 20min then resume cooling to pitching temperature

Additions

Water Treatments: 2g Calcium Chloride (CaCl2), 4g Magnesium Sulphate (Epsom salts - MgS04), 8g Calcium Sulphate (Gypsum- CaSO4).
Boil Additions: Yeast nutrient and whirlfloc at 10min to end of boil addition.

Brew

  • Mash in at 71.1°C with 19.5L, rest for 60 min at 66°C.
  • Sparge with 13L at 80°C
  • Preboil size 29L
  • Boil time 90mins
  • Fermenter volume 24.5L

Single Malt and Single Hop – Maris otter and superdelic

mash-out for 10min at 76C

fermentation 20C 14 days.

under pressure but not in the fermentation chamber. Average temp in location is around 20C so it should be fine.

moved to fermentation chamber as the weather became cold.

raised temp to 22 for the last few days

pill final 1.015, 21.5L bottled
