Water Treatment

1/2 teasp Cal Chl, 2 teasp Cal Sul, 1 teasp Mag Sul in Mash, plus 5 drops LA88% in Sparge

Boil Additions

1/2 whirlfloc and 1/2 yeast nutrient at 10 min

Brew

  • Mash in at 67.5°C with 16.5L, rest for 60 min at 67.5°C.
  • Mash out: 10 min at 75C
  • Sparge with 16L at 75°C
  • Preboil size 28L
  • Boil time 75mins
  • Postboil size 23.5L
  • Fermenter volume 22L

Fermentation

18.5C for 3 days, raised to 21C to end Day 11, then reduced temp to 7C over last 3 days. Pressure to 10psi from Day 3, closed spunding valve Day 11 securing CO2 volume of around 2.5 through to kegging.

Copy of Matt’s recipe using of a Smash Ale using Thomas Fawcett Golden Promise grain and Motueka hops. A very nice Ale with soft mouthfeel, light bitterness and some great hop forward fruitiness. I had an opportunity to compare it side by side with Matt’s Golden Weka. While the overall nose and taste was very similar, mine was very hazy while Matt’s was nice and clear. Weird.
