Grain

  • 6.0kg Ale Malt
  • 0.35kg Crystal Medium
  • 0.35kg Munich
  • 0.3kg Dark Chocolate Malt

Yeast

M44 USWC 2 pkts

Water Treatment

1 teaspoon Cal Sulphate and 1/2 teaspoon Cal Chloride to mash water, 4 drops Lactic Acid 88% to sparge water

Boil Additions

1/2 teaspoon yeast nutrient and 1/2 whirlfloc tablet at 10 min to go in boil

Brew

  • Mash in at 68°C with 22L, rest for 90 min at 68°C.
  • Mash out: 75C for 10 min
  • Sparge with 12L at 75°C
  • Preboil size 27.5L
  • Boil time 60mins
  • Top up volume 2L
  • Postboil size 25.5L
  • Fermenter volume 23L

20C for 14 days

Notes

A winter favorite, but good all year round. A smooth, rich “porter” feel with the added kick of 340g hops. Nice malty/chocolate taste with hoppy flavours kicking in.

Mashing in for this brew was with 22L and at 50C for 30 min, 68C for 60 min then mash out at 76C for 10 min.
