Water Treatment

1/2 teaspoon Cal Sul and 1 teaspoon Cal Chl in mash water, 1/2 teaspoon LA 88% in sparge water

Boil Additions

1/2 yeast nutrient and 1/2 whirlfloc at 10 minutes

Brew

  • Mash in at 65°C with 18L, rest for 60 min at 65°C.
  • Mash out: 10 min at 75C
  • Sparge with 16L at 75°C
  • Preboil size 28L
  • Boil time 60mins
  • Postboil size 24.5L
  • Fermenter volume 23L

Fermentation

Primary @ 19C, Rest @ 22C and with 3 days to go (to Day 14) gradually reduce temp to 7C

Notes

This is a variation on an American Pale Ale style from a Panhead Supercharger Clone recipe from Home Brew West in Auckland I brewed back in 2020. I’ve switched out Light Crystal and Toffee Malts for Vienna and Supernova, substituted Simcoe, Centennial and Citra with Nectaron, Kohatu and Strata and replaced US-05 with BRY-97.

Dry hopped Day 4 following primary fermentation, SG at 1.012, and slowly increased pressure to 6.5psi and temperature to 22C. From about Day 7 increased pressure to 18psi and held. Dropped temperature gradually to 6.8C Day 11 – 14 and pressure dropped to 12.6 psi equating to 2.4 vol CO2.

Result is a nice APA style with good head retention, not too bitter
