Heat off @ 0min addition, rapidly cool to 80C. Hold @ 80C until -10min addition, then resume cooling to pitching temperature.

2g Calcium Chloride (CaCl2), 4g Magnesium Sulphate (Epsom salts – MgS04), 8g Calcium Sulphate (Gypsum- CaSO4)

Boil Additions

2g YN and 1g WF @ 10min

Brew

  • Mash in at 66°C with 17L, rest for 60 min at 66°C.
  • Mash out: 10min @ 78C
  • Sparge with 16L at 78°C
  • Preboil size 29L
  • Boil time 60mins
  • Postboil size 27L
  • Fermenter volume 25L

Fermentation

20C @ 1-2psi, 22C for rest. capture CO2 once fermentation complete approx day 7

Carbonation

Self carbonated to approx 2.35 volumes. Transferred into all rounder with finings. By the time I bottled the volume has mysteriously dropped… Bottled using counter pressure filler.

Notes

West Coast RIPA notes

This is the second brew of the West Coast RIPA, different yeast and slightly changed the grain.

I swapped the 2x BRY-97 yeast for 1x FT02 Vape yeast. For the grains I lowered the amount of Vienna by 300g and swapped it for 300g redback, and added an additional 50g of eclipse wheat making a total of 6.75kg. Hops remained the same as v1, mosaic and riwaka.

Brew went well, I had to close the window to help the brewzilla get to 100C for boil as it was too cold outside, need the jacket!

I didn’t squeeze the mash just let it drain through. I then set the mash basket resting on a bowl to capture the last of the wort and use it instead of topup. I managed to get 750ml wort added back into the boil before the 30min mark

Transfer went well, I’m considering a hop basket though as a little too much comes through, not a big issue especially with the fermzilla collection jar. Volume was good, stopped it at 25L in the fermenter and collected the final 1L to be used for something else, maybe bread.

In the fermentation chamber with initial gravity at 1.059. Colour is more what I was aiming for, darker than the first version with the addition of redback and eclipse wheat.

Day 1 Sunday

Fermentation began within about 18hours and progressed well.

Day 2 Monday

Fermentation going well, foam building up.

Day 3 Tuesday

Foam built up too high again and hit the top of the fermenter. I cleared it and reset the pressure kit. I allowed some of the foam tonpush through into a jug so the pressure could come back down.

Day 4 Wednesday

A little blocked again but not as bad, perhaps the lost trub meant less yeast. Cleared and reset. Gravity at around 1.020, seems close to finish but hopefully a few more points drop.

I added the aromazyme and a day 4 dry hop using half of the dry hop amount (40g mosaic, 50g riwaka). Foam hasn’t hit the top again yet, and it’s bubbling away at a slightly higher pressure of about 5-6psi.
